天然色素应用研究进展

摘 要：介绍用于食品、药品和化妆品的常见天然色素的品种、分类及其应用研究，也包括介绍天然色素的医疗保健作用、理化性质以及分离提纯天然色素的方法诸如溶剂萃取、微波与超声波萃取、超临界二氧化碳萃取以及高压萃取。并对比合成色素的毒性与副作用危害性，评述了天然色素的社会意义和经济价值。

Advances in Applied Research on Natural Pigments

Abstract: This paper presents breeds, classifications and applied investigations of the natural pigments added to foods, drugs and cosmetics. And it includes physicochemical properties of, health care and medical treatment effects of and isolation and purification methods (such as solvent extraction, microwave and ultrasonic wave assisted extraction and supercritical carbon dioxide fluid extraction and high pressure extraction) of the natural pigments. Also, it reviews the social significance and the economic value of the natural pigments in comparison with the synthetic coloring agents which have toxicity and by-side effects.
